Lemon Pepper Salmon
This dish is healthy and easy to make! Yep, the keyword here is easy. It takes 10 minutes to prep and 20 minutes to bake. Total time no more than 30 minutes. Max! And the catch? A perfectly healthy sumptuous dinner. Pleasant to look at and taste exquisite.

Ingredients:
Salmon
Lemon (both lemon juice and lemon zest)
Black Pepper
Herbs. (Any herbs, but I prefer thyme)
Olive Oil

Instructions:
1. Preheat oven to 375F
2. Place a large piece of aluminum foil on the baking pan. Spray a thin layer of nonstick spray, then lay down a row of your choice of fresh herbs and lemon slices.
3. Place the salmon over the herbs and lemons. Top it with lemon zest, lemon juice, salt and pepper. And then lay another row of lemon and herbs.
4. Seal up the salmon with aluminum foil. But make sure to leave some room for air to circulate.
5. Put the sealed salmon to the preheated 375F oven for 15-20 minutes. Until the salmon flakes easily with a fork.
6. When ready to serve, top the salmon with additional fresh herbs and lemon juice.

How to know when salmon is finished cooking:
1. Check for flaking: Using a fork, peek in the thickest part of the salmon. If it's beginning to flake but is still a little translucent, it's done! Or, if the salmon flakes easily with a fork, it's ready.
2. Use an instant read thermometer: When the salmon hits 145F at the thickest part. It's done!
